Watermelon and Strawberry Salad with Mint, Cucumber & Feta

When I was a kid, we loved eating watermelon in summer ... and of course, seeing how far we could spit the seeds. Today's watermelons are seedless, so they're easy to slice, dice, and add to salads like this one. No muss, no fuss, and no time spent carefully removing seeds.
  • ⅛th seedless watermelon
  • 1½ cups strawberries, (12 to 15)
  • 4-inch piece English cucumber, cut into quarters lengthwise and then ½-inch pieces
  • ¾ loosely packed cup fresh mint leaves, ripped into pieces
  • ⅓ cup crumbled feta cheese
  • 1 green onion, trimmed and sliced on the diagonal into ½-inch pieces
  • 1 lime, juiced
  • Drizzle of honey
  1. Slice the watermelon into ¾-inch cubes (about 2½ cups). Place in a large bowl. Wash, dry, and remove the stems from the strawberries. Slice large berries into quarters and smaller berries in half, and place in the bowl. Add the diced cucumber, mint leaves, feta, green onion, lime juice, and honey.
  2. Stir gently to combine, and serve with a second drizzle of honey as desired.
