Deli-Lovers Lox Sandwich with Coleslaw and Russian Dressing

It's hard to describe the flavor combination of coleslaw and Russian dressing (a ketchup/mayo blend) because it's so ingrained into my childhood taste buds. The combo is creamy, crunchy, and it gives whatever is wedged between two slices of bread a flavor boost. You can serve this sandwich with potato chips, but for a healthier spin, serve with a variety of raw veggies.
  • 1 tablespoon Russian dressing
  • 2 slices 7-grain bread (or rye bread)
  • 8 to 10 baby spinach leaves
  • 3 thin slices tomato
  • ⅓ cup coleslaw
  • A few thin slices lox *
  1. Divide the Russian dressing between the 2 slices of bread and spread evenly. Arrange the spinach leaves over one of the bread slices. Arrange the tomato slices on top followed by the coleslaw and lox. Place the bread slices together, slice in half, and serve.
Lox can be pricey, but luckily it has big flavor so that a little bit goes a long way. You can use a few slices in your sandwich, or lay it on heavy. It's your choice.
