Joy is best known for her work as health and nutrition expert for the TODAY show and her new hit NBC show, Health + Happiness. Joy is the founder of Nourish Snacks, and she’s the author of 12 New York Times best-selling books. She’s a mom of three and loves to cook for her family.

Loved this podcast! I ordered a copy of the book right away! My favorite recipe…and I’ve tried it, is the eggs Benedict. The Hollandaise sauce is made over so it’s not full of fat. Delicious!!!! Can’t wait to try another recipe this week!
I have an old recipe for waffles from Better Homes and Gardens that uses oats. It called for 6 T. of melted butter and I have always just left it out. These are my family’s favorite!

Cauliflower rice, because it tastes great and is excellent when paired with other veggies and soy sauce!
Love real flood the spaghetti made healthier…I’m a real comfort food made over person.
I use a lot of lowfat Greek yogurt to fully or partially replace fat in many of my recipes – dips, cakes, sauces, mashed/creamed vegetables, casseroles…
I also de low fat plain Greek yogurt for all my yogurt recipes but also subbed for mayonnaise and sour cream
My daughter has been on a special diet (Paleo-AIP) to wean herself off nasty medications for IBS and my husband has gone on a strict diet for his diabetes. Consequently, I began following Liz’s Healthy Table as I have been on the lookout for recipes I can make for them and for the rest of my family that will satisfy all of them and prevent the need for two meal preps! From Junk Food to Joy Food seems the answer to my prayers! Yours is a fabulous site with healthy, do-able recipes that meet my (and their) needs! Thank you for the work you do and your sharing it!

Our family is on the road a lot in the summer for baseball tournaments. I am trying to be better prepared to eat healthier on the go. My son has food allergies so that adds to the challenge since we can’t always trust eating out. Thx for the chance!

My favorite recipe makeover is cauliflower crust pizza. It is hard trying to get my family to eat healthy without missing the flavorful meals and snacks they love. I would love to win so that my family would enjoy eating healthy and not miss the flavors they crave.
I listen to this podcast because I have an extremely picky eater whose diet I am trying to improve by making small substitutions or changes to foods she eats. We also need to find healthier snacks that she will eat.

Favorite recipe makeover is using 1/2 cauliflower to make mash potatoes. Have a potato loving family that couldn’t tell the difference that they were in fact eating healthy! Love, love it and would love more ideas to make changes that grandkids and my big kid husband might actually enjoy!

I love making Chocolate “Muffins” with chocolate cake mix and pumpkin! I would love to win this because I have a 9 year old who had a heart transplant as an infant and her heart health is really important. It is hard to fight against all the junky foods out there!
